Dalton Hirsh's journey into winemaking began during his freshman year as an enology student. At just 19, he crafted his inaugural single-varietal Cabernet Sauvignon, sourcing grapes from Napa Valley. Employing glass and stainless steel tanks for fermentation, followed by a fourteen-month maturation in new French oak barrels, he produced a wine of exceptional quality. Encouraged by a professor, Dalton entered this creation, named Aida after a memorable evening at the Metropolitan Opera, into the Los Angeles International Wine Competition. His efforts were met with acclaim when Aida secured a Silver Medal, distinguishing Dalton as the youngest winemaker to receive such an honor.
This early success fueled Dalton's passion, leading him to establish Abraxas Winery. At the helm, he continues to push the boundaries of viticulture, experimenting with unconventional varietals and innovative techniques to craft unique and spectacular wines each vintage. His dedication and artistry have garnered numerous accolades, solidifying his reputation as a rising star in the wine industry.
The name "Abraxas" holds profound significance for our winemaker. Inspired by Hermann Hesse's novel Demian, where Abraxas symbolizes the fusion of godly and devilish elements, it represents the pursuit of a higher purpose and the journey from the ordinary to the sublime. For Dalton, winemaking embodies this philosophy—a sacred union between human artistry and the natural beauty of the earth.
